Friday Night

Fridays can go either way- pizza or big meal. Tonight was a mix. I knew it was the only night of the weekend I would be home to get anything done. I did the grocery shopping and got to work (not exactly that quickly).

I made a beef and cheddar pie (see the link for the recipe) for dinner. It took a while so if I were making this recipe during the week, I would prep the veggies and meat when I had time a day or two before. If you really like the recipe and will make it often, you can make a double batch and freeze half for another meal- that will make your prep a lot faster.

Prep Ahead

I had the time, so I got some prep work finished. I made a soup, just regular chicken noodle and I got some chicken breast cooked and frozen into usable portions. The chicken was on sale and I have lots of recipes that uses cooked chicken- some went into the soup. After the chicken was done, I made a stock with the bones. It was a busy night! But, future meals will be easier.

Still Ahead tonight I need to make brownies for halloween tomorrow.

Grilled Cheese and Tomato Soup

It was a damp, rainy day and since I was the only one who ate the chicken cacciatore last night, I was just going to serve that again to the rest of the family. I had to so some fundraising work and then I had a dinner to go to. But, plans change.

I was the hero when I served the kids tomato soup and grilled cheese. It was the perfect day.

In our house, Thursdays are Leftover Buffet days. I teach at night, so I relieve myself from cooking. This also helps me to clean out the refrigerator before I do the grocery shopping for the next week.

Chicken Cacciatore

The plan today was for chicken cacciatore. I started it last night by making my own sauce, the recipe link calls for store bought, but I had the ingredients I needed. This is one of my favorite meals and I serve it over polenta. Yum!!!

I never make it in the slow cooker, so this was a new experience. Instead of browning the chicken on the stove top, I popped it into the oven in the morning while I was showering. Then I just combined the rest of the ingredients and dinner was done.

My husband called to say he needed to work late. The kids had to go various places and it was 7:30 by the time we got home- still no husband. Another important thing happened- Charlie Brown's Halloween special was on. The kids ate cheeseburgers and I sat alone at the table eating the chicken cacciatore. It was delicious!!

And because I was the only one who ate the chicken cacciatore- there is a lot leftover! I can't wait to have it again for lunch.

Steak and Cheese

How To:
Cut potatoes at 3:30 while kids are doing homework. I will also pre bake the potatoes with olive oil, salt and pepper. I will shut off the oven to go to yoga and finish cooking them before dinner.

After yoga, put oven back on to heat fries. I sliced the beef, seasoned it with salt, pepper, and garlic powder. I sauteed it while my husband made the salad (I hate making salads). Once the beef was done, topped with cheese. The giant part was a large round loaf that was cut in half, topped with stead and cheese and cut at the table. The kids thought it was the neatest thing. I got the idea from Rachel Ray Magazine.

I also made my soup for the week (usually done on Sundays, but I was late this week). Look for the Creamy Chicken and Rice Soup recipe link on the sidebar. It is very good.

The cooking week

I plan my meals for the following week on Wednesdays. I relax with the family schedule for the following week and magazines/cookbooks and begin the "what's going to be for dinner" routine. I like to try different recipes as well as the old standards and it depends on what the week looks like as to how much effort can be put towards cooking. I also try to make a soup on Sunday to last part of the week and I also prep any other meals. I usually shop on Friday or Saturdays, but this week I am busy on Friday afternoon and will be away on Saturday. The grocery store sale flyers will not be part of my planning this week. I will have to shop on Sunday- not my favorite time to shop- but that's life.
