Spicy spaghetti with Fennel and herbs

Ash Wednesday. No meat. I tried the spaghetti with fennel and herbs and felt like I outdid myself. I did not have a red jalapeno and, in fact, did not really know what they were. I could have used a green jalapeno as a substitute, but I didn't. I had a sweet red pepper and while the spice was not as spicy, the flavors were complimentary.

Monday after the Super Bowl

This should be easy. Totally comfort food. And fast.

Grilled cheese and tomato soup. Kids love it. All food is consumed. Healthy breads, dairy, and veggies. Dinner done!

Chicken Cacciatore

My favorite! And I love the slow cooker recipe attached. I do use my own sauce. This week I used the marinara I made on Sunday. The one recipe of marinara got plenty of use this week and I still have a little left if anyone wants some pasta at any point.

I am going to try something new with this recipe. I made a lot so I am going to try freezing half of it. I will let you know what happens.

Chili

Yesterday, I was ambitious, but I did not have enough time to get everything done. Tonight, still bracing for the addition of play practices, I was making food for the freezer. I made a chicken sausage stew recipe that I have had for years. There is nothing like the old, trusted recipes. You can vary them, if you like, and you know how much yield you get from a recipe.

Tonight I served half of the chili. That only needed to be heated. I put some potatoes in the oven to bake and roasted a variety of vegetables. My family was free to combine the items to make thier meal something they would like. I used the potato as a base for the chili, added some cheese on top, and had veggies as a side. My 8 year old said that I should open a restaurant with the chili and I would have lots of customers. Now that's a compliment!
