Extra Mouths to Feed

For the next few weeks we are going to have extra people to feed for dinner. My brother-in-law moved away for a new job and while his family is still here, they will be joining us for dinner most nights.

Tonight we had honey sesame chicken, zucchini, rice, salad, and cheese bread. The chicken and bread was from a disney cookbook. I the prepared the zucchini my favorite way- and it was the first time my sister-in-law ate zucchini!

Sweet and Sour Zucchini

1/2 red onion, sliced
2 zucchini, cut into strips
Salt and pepper to taste
Soy sauce
2 tablespoons pineapple jam

Heat a skillet over high heat. Coat with olive oil. Add zucchini and onion and season with salt and pepper. Turn over the zucchini and onions after they get a sear on each side. When almost completely cooked through, spinkle with soy sauce and add the pineapple jam. Stir. Reduce the heat and cook until the sauce thinkens.
