Buffalo CHicken with Blue Cheese Fondue

Wednesday I made Buffalo Chicken with Blue http://www.blogger.com/img/blank.gifCheese Fondue. I used my own wing sauce, but I did follow the directions for the fondue. This is a great combination! I served the meal with all the veggies, the bread and the chicken on platters for everyone to take and dip. The veggies were all gone by the end of the meal.

Beautiful Weather


Today was the warmest day in a long time. I had the Creole Stew ready for dinner. I made some rice and a salad to go with it. Doesn't it look good?

I had some extra time and I had the ingredients for a Quick Chicken and Corn Chowder. The recipe is in an Annual Cooking Light cookbook; a cookbook I had for a long time. I think we will have it for dinner tomorrow.

Steaks on the Grill

The weather was great today, especially for March. I had a bridal shower to go to this afternoon, so I needed either a slow cooked meal or something quick. I decided to make steaks on the grill. Mashed potatoes and grilled asparagus finished the meal.

I also had time to make tomorrow's dinner; creole stew. The recipe is in a Southern Living cookbook. It smells great. All I have to do tomorrow is make some rice and a salad.

And...I have a pot of sauce on the stove with meatballs right now. That will go into the freezer for whenever.

Lasagna


Yesterday was such a good time, I forgot to post the rest. Like the picture of the lasagna before it went into the oven. Or, that I made an extra lasagna that is in the freezer for another time. And, with some of the leftovers from yesterday, I stored some in individual portions in the freezer for future lunches. One meal, productive for days!

Sunday Supper

The Graham Pub was open tonight. Roasted garlic soup, one of my favorite recipes from Southern Living, lasagna, and red velvet cupcakes. The besties were over. It was a good day.

Pasta and Vegetables

Last night was not a total rush, but everyone was home at one point of time for us to eat together. I cut up the veggies I had: broccoli, carrots, red onion, and roasted red peppers. I steamed the broccoli and carrots for until they were tender-crisp. While the pasta was cooking, I sauteed the vegetables in garlic-infused olive oil and seasoned with salt and pepper. Once the pasta was cooked, I put it into a large bowl with some butter and tossed in the vegetables. Shaved Parmesan cheese and a sprinkle of olive oil completed the dish. It was very good.
